Baked vegetables is an easy baked vegetable recipe which is low in calories and rich in fiber and nutrients. White sauce mixed with butter and milk gives a buttery flavour to the baked vegetables. Hope you like this recipe as you did like my previous recipe Poha Kheer.

Ingredients:-

  • Two Tablespoons – Butter
  • One recipe- Onion(finely chopped)
  • One-Fourth Cup Of Each – French Beans, Carrot, Green Peas, Baby Corn, Cauliflower Florets(all boiled)
  • Two Teaspoons – Salt
  • One Teaspoon – Black Pepper Powder
  • Three Cups – Cheese(grated)
  • Tomato Slices

FOR WHITE SAUCE

  • Two Cups – Milk
  • Two Tablespoons – All purpose flour
  • Two Tablespoons – Butter
  • A Pinch Of Cinnamon Powder

Directions:-

FOR THE WHITE SAUCE

  1. Heat the butter in a sauce-pan, add the flour and cook on a medium flame for few seconds.
  2. Add milk and cook for three to four minutes.
  3. Put cinnamon powder and mix well.
  4. Keep aside.

BAKED VEGETABLES

  1. Mix all the ingredients together and keep stirring to avoid lumps.
  2. Melt the butter.
  3. Add onions and stir-fry till looks glossy.
  4. Mix all the vegetables and continue to stir-fry, flame must be high till vegetables look like they are coated with the butter.
  5. Take the vegetables off the heat and mix in the salt, pepper, and white sauce
  6. Transfer mixture into an oven proof serving dish.
  7. Sprinkle the cheese to cover the vegetables mixture,
  8. Garnish with tomato slices and bake for 160 C in a preheated oven for half an hour, or till cheese is slightly brown.
  9. Enjoy this baked vegetables with a garlic bread or a bowl of soup.
