Jalebi pudding is a delicious Indian desserts recipe with crispy and juicy jalebis served with strained yogurt and some flavorings. Hope you like this recipe as you did like my previous recipe layered rice.
One Cup All Purpose Flour
Two and Half Cup – Yogurt
Oil For Frying
Two and Half Cups – Sugar
Two Cups – Water
A Pinch Saffron
Six – Green Cardamoms
Two Tablespoons – Warm Milk
A Pinch Of Nutmeg
A Pinch Of Cardamom Powder
Mixed Dry Fruits
In a large bowl, whisk all purpose flour, yogurt and water to a smooth batter like consistency.
Cover and keep in a warm place to ferment for 24 hours.
Before cooking the next day, whip the batter again for a few more minutes.
Heat enough oil in a pan on medium heat.
Pour some batter into a pastry bag with a small straight tip.
Squeeze round big spirals into the hot oil and deep fry, turn it over carefully and fry it both sides until they are evenly golden and crisp.
Drain and soak in cardamom sugar for 3-4 minutes.
Take it out of the syrup and put in a serving dish.
For cardamom syrup take two cups sugar, two cups water, a pinch of saffron, and six green cardamoms.
Combine all the ingredients in a vessel and cook on medium flame for thirty minutes.
Strain out cardamoms and cool.
Mix two cups of strained yogurt and two tablespoons of warm milk, half cup sugar, a pinch of nutmeg and cardamon powder in a bowl.
Let it chill.
Now arrange all of them with the hot cardamon syrup dipped jalebi garnish with dry fruits and serve.
You can serve jalebis with or without yogurt or you can serve it with warm milk as per as your choice.
