Ingredients

WET INGREDIENTS

  • 1 cup Almond Milk (Non-Dairy Milk)
  • 1 tbsp Applesauce
  • 1 tsp vinegar
  • 1/3 cup White Sugar (1 tbsp more for sweetener)
  • 1/4 cup Neutral Oil
  • 1 tsp Vanilla Extract

DRY INGREDIENTS

  • 2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/2 tsp Salt
  • 1.5 to 1.75 cups Flour

STREUSEL INGREDIENTS

  • 1/2 cup Flour
  • 1/3 cup Brown Sugar
  • 1/3 to 1/2 tsp Salt
  • 2 tsp Cinnamon
  • 1 tbsp Vegan Butter (or any cooking oil)
  • 2 tbsp Refined Coconut Oil

Instructions

  • Line a pan with parchment hanging on the edges. Preheat the oven to 350 ° F.
  • In a bowl, mix in the wet ingredients until the sugar is fully combined.
  • In another bowl, whisk 1 1/2 cup flour, baking soda, baking powder, and salt. (Add two tablespoons almond flour to the dry ingredients for additional texture its optional.
  • Fold into the wet until just about combined. Add more flour if needed one tablespoon at a time to make just slightly thick batter. Pour into a parchment lined pan.
  • In a bowl, add the dry streusel ingredients and mix well. Add the vegan butter and oil and mix it in with your fingers until well distributed and crumbly. Spread over the cake batter.
  • Bake at 350 degrees F for about 35 to 45 minutes. Cool for ten minutes, then remove from pan. Cool completely before slicing. Store on the counter for up to two days, refrigerated for upto seven days, freeze the slices for up to a month.

Notes

Oil-Free: Use apple sauce for the batter
Gluten-Free: Mix 3/4 cup white rice flour, 1 1/4 cup almond flour. 1/3 cup potato starch, 1 tablespoon chia seeds or flax seed meal. Use 1 3/4 cup of the flour mix and add more as needed. For streusel use a mix of rice flour and almond flour
Icing: Mix 1/3 cup powdered sugar with a teaspoon or so non-dairy milk and use. Use syrup dressing as it keeps the cake moist for longer(three tablespoons sugar + one tablespoon water)
Variations: Add seasonal berries, dried fruit or nuts with the dry ingredients of the batter.

ABOUT INGREDIENTS:-

APPLESAUCE:- It is made of unpeeled apples and a variety of spices with added sugar or honey for flavorings or sweeteners. You can also make applesauce at home as a homemade thing is best for your family. Applesauce is a good substitute for butter or oil in baking.
ALMOND MILK:- Milk manufactured from almonds with a creamy texture and nutty flavor can also be made at home using blender, almonds and water. Free from cholesterol, saturated fat, and lactose perfect for vegans.
CINNAMON:- A spice obtained from the inner bark of several tree species from the genus Cinnamon. Commonly used as an aromatic condiment and flavouring material. The characteristic odour of cinnamon is very hot pungent aromatic taste.
