Red Lentil Curry

Ingredients:

  • 3 cups red lentils
  • 1 onion
  • 1 tomato
  • 2-3 garlic cloves
  • 3-4 curry leaves
  • 1/2 teaspoon mustard seeds
  • 1teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • Refined oil
  • A pinch of asafoetida
  • 1spring of coriander leaves

Directions:

1.Soak red lentils for half an hour and pressure cook them for 2 whistles with a 1 teaspoon of turmeric powder and salt.

2.Now, heat 2 tablespoons of refined oil in a saucepan and add mustard seeds.

  1. Now, add curry leaves and asafoetida once the seeds crackle. Add pressed garlic cloves to it.
  2. Add chopped onion and tomato the pan and stir fry them. Now spice up the mix with red chilli powder and coriander powder. You can add spices according to the taste.

5.Now, add the boiled water of red lentils and let it boil. After 2 minutes add the lentils and stir fry to mix all the ingredients.

6.Cover the pan and let it simmer for a minute. You can manage the consistency by adding water.

7.Now, finally garnish the curry with chopped coriander and serve hot with steamed rice. It also goes well with Indian flat bread.

Tip – Sometimes, the lentils won’t get cooked in two whistles. Then not to worry, open the cooker and add some chilled water to it and pressure cook for one or two whistles according to the requirement.
