There are Different Types Of Pav Bhajis:-

Cheese Pav Bhaji : Pav Bhaji topped with cheese & butter gives rich taste .

Paneer Pav Bhaji :  Pav Bhaji topped with cottage cheese & butter, paneer is know to be healthier & great source of protien.

Khada Pav Bhaji : It is as same as normal pav bhaji but not smashed instead its like chopped bhaji which restores the fibre of vegetables.

Jain Pav Bhaji : Pav Bhaji served without garlic onion, specially for jain community people.

Pav Bhaji Fondue : Pav is served with bhaji in fondue bowl.

Pav Bhaji Recipe

Ingredients

Salt as per tasted

  • 8 units pav (bread for serving)
  • 1 teaspoon aamchur powder (dry mango powder)
  • 1 teaspoon pav bhaji masala (refer pav bhaji masala recipe )

Instructions

Directions for cooking Bhaji

  • Take all the vegetables listed in ingredients, wash them properly and cut into small pieces
  • Add veggies such as potatoes, cauliflower, carrot and green peas to a pressure cooker of 2 litres, add 2-3 cups of water and pinch of salt to it.
  • Close the pressure cooker proper and cook on medium flame for 2 whistles, which approx takes 7-8 mins.
  • Allow the pressure cooker to cool down by itself, than check for veggies cooked well or not. You can also use deep vessel or pan to cook veggies.

Making Bhaji For Pav Bhaji

  • Heat pan on medium flame, add 2-3 tablespoon of butter/oil to it.
  • As soon as butter melts, add 1 teaspoon of cumin seed and let them sizzle until colour changes.
  • Then add finely choped onion , ginger and garlic saute untill onion turns translucent.
  • Add tomato, boiled french beans, green peas and pinch of salt. Allow to cook untill tomato turns soft.
  • Now add spices such as 1½ turmeric, ½red chilli powder, dry mango powder and 1 teaspoon pav bhaji masala. Refer pav bhaji masala recipe for home made spices.
  • Then season with salt as per taste.
  • Add potato and other boiled vegetable, and mix. Using masher mash the veggies until they are mixed with spices.
  • Add ¾ cup of water and keep on stirring occasionally, let the bhaji simmer for 7-10 min.
  • Bhaji should have paste like consistency neither too dry nor very thin, add water if needed.
  • Stir often to prohibit bhaji from sticking on pan, check the taste if required then add salt /pepper/Pav Bhaji Masala.
  • Simultaneously, you can fry pav in butter by slicing it in middle.

Frying Pav For Pav Bhaji

  • Take shallow pan and add butter, keep the flame to low.
  • While butter melts add Pav Bhaji Masala to it, it's optional you can skip it.
  • Cut the pav horizontally into halves and shallow fry from both the sides until turns light brown, hardly takes few seconds.

Sides for Pav Bhaji

  • Mostly, Pav Bhaji is served with chopped onion, tomato and lemon.
  • Firstly, take chopped onion and tomato.
  • Add butter to pan and allow it to melt. Once butter gets melt add Pav Bhaji Masala and fry the chopped onion and tomato. (Optional)
  • Now transfer the above mixture to plate.
  • Garnish it with lemon slice and chopped coriander leaves.

Serving Pav Bhaji

  • Take a bowl or plate for serving bhaji, top it up with butter slices and some chopped coriander leaves.
  • Lemon juice can be added to bhaji if you like it more tangy. Extra cheese can be added for cheese lovers.
  • Take pavs and sides in other plate & serve it hot.

Notes

Note:
  1. Be carefull while using pressure cooker, don’t open it immediately after cooking allow it to get cool for 10 mins, you can check by lifting whistle of cooker by spoon.
  2. Pav Bhaji could also be made without smashing known as Khada Pav Bhaji, it restores the fiber of vegetables.
  3. Check the boiled vegetables with toothpick, whether properly cooked or not.
Tips:
  1. To give proper red color to bhaji add beetroot after boiling, instead of artificial food color.
  2. Can be topped with  to get rich taste.
  3. Add chopped onion & tomato with sliced lemon as side.
  4. One can also lightly fry onion and tomato in butter and pav bhaji to add more taste.
  5. For Vegan, instead of normal butter vegan can also be used to get same taste.
  6. Other veggies like boiled  broccoli, sweet corn, capsicum could be added to get more nutrient value.
