Sprouts Usal

Sprouts usal is an Maharastrian cuisine made with mixed sprouts with spices. We are using sprouts here to give this usal a different taste. Hope you like this recipe of usal as you did like my previous recipe Buttery Pumpkin Soup.

Ingredients:-

  • Two Cups – Mixed Sprouts
  • Three Cups – Water
  • Two Tablespoons – Oil
  • Seven Cloves – Garlic, Sliced Lengthwise
  • Half Cup – Onion(chopped)
  • One Cup – Tomatoes(chopped)
  • One Teaspoon – Green Chillies(chopped)
  • One Teaspoon – Coriander Powder
  • Two Teaspoons – Garam Masala Powder
  • One Pinch – Asafoetida
  • Half Teaspoon – Turmeric Powder
  • Half Cup – Grated Coconut
  • Salt As Required
  • Handful Of Chopped Coriander Leaves

Directions:-

  1. Take two cups of mixed sprouts in a bowl. Rinse them very well.
  2. Add the rinsed sprouts in a pressure cooker with two cups of water.
  3. Pressure cook the sprouts in a medium flame for 3-4 whistles or until they are cooked completely.
  4. Reserve the stock of sprouts for further use.
  5. Heat two tablespoons of oil in a pan.
  6. Once oil heated add sliced garlic and saute for a minute on a low flame.
  7. Add chopped onions and saute them till they become transparent.
  8. Then add chopped tomatoes and chopped green chillies.
  9. After few seconds add turmeric powder, coriander powder, garam masala, and a pinch of asafoetida.
  10. Mix the spices very well with the onion-tomatoe mixture on a low flame.
  11. Now add the boiled sprouts and the reserve sprouts stock.
  12. Mix them all very well.
  13. Put one cup of water.
  14. Season with salt as required.
  15. Simmer usake for five minutes till it bubbles.
  16. Add chopped coriander leaves. Cover and cook for a minute on a low flame.
  17. Remove the lid, add grated coconut and mix well.
  18. Stir and simmer for two more minutes.
  19. The usal will start thickening by now, then switch off the flame.
  20. While serving usal, sprinkle chopped onions and some lime wedges.
  21. Serve mixed sprouts with pav bun.
