Soya Rice is a nutritious soya chunk and rice recipe with fresh vegetables and aromatic spices to make it a balanced meal. Hope you like this recipe as you did like my previous recipe Chocolate Chip Cookies.
Ingredients for Soya Rice:-
- Half Cup Each of – Basmati Rice And Soya Chunks
- One-fourth Cup – Carrots(finely chopped), And Green Peas(Fresh or Frozen)
- Half Teaspoon – Cumin Seeds
- One Small Bay Leaf
- Two-Three – Peppercorns
- Ome Small Stick Of Cinnamon
- Three – Cloves
- One Medium – Onion(thinly sliced)
- One – Green Chili(finely chopped)
- One-Fourth Teaspoon – Turmeric Powder
- Water As Required
- Salt To Taste
- One Tablespoon – Clarified Butter
- Mint Leaves To Garnish
Directions:-
- Rinse rice two to three times in water and soak it in water for 15-20 minutes.
- Rinse and soak soya chunks in hot water for fifteen minutes.
- After fifteen minutes, chunks will increase to almost double in size. Drain the excess water and again rinse them two to three times in water to remove raw smell.
- Heat clarified butter in a non-stick pan over medium heat.
- Add cumin seeds, bay leaf, black peppercorns, cinnamon stick, and cloves and allow cumin seeds to sizzle. Add sliced onion and green chili and saute until onion turns transparent.
- Now add chopped carrot and green peas and saute for two-three minutes.
- Drain the excess water from soaked rice and add them in the pan.
- Next, add drained soya chunks and turmeric powder. Mix everything well and saute for a couple of minutes over medium heat.
- Time to add one and one-fourth cups of water and salt to taste; bring it to boil over medium heat.
- When it starts to boil, reduce heat to low and cook covered for about ten minutes.
- Do not open the lid in between as steam will escape and rice will not cook properly and become sticky.
- After ten minutes, turn off the heat and keep it over hot stove-top for at least 7-8 minutes. Now, remove the lid and fluff the cooked rice with a fork.
- Soya Rice is ready to be served.
- Transfer it to a serving bowl and garnish with fresh mint leaves.
