Wonton Soup – Low Calorie Healthy Soup

 Wonton Soup is a healthy and delicious soup that you can make easily at home. Vegetable dumplings in a vegetable stock give you the proper nutrients which is good for health.

Ingredients For Wonton Soup:-

  • One And A Half Cups – Shelled Edamame(frozen)
  • Two Large – Carrots(one finely grated the other sliced)
  • Salt To Taste
  • Three – Green Onions(two roughly chopped and one thinly sliced)
  • One Tablespoon – Miso Paste
  • Two Tablespoons – Lemon Juice
  • Two Tablespoons – Fresh Mint(chopped)
  • One Clove – Garlic(grated)
  • One Teaspoon – Ginger(grated)
  • Twenty To Twenty Five – Wonton Wrappers(vegan)
  • Six Cups – Vegetable Stock

Directions:-

  1. Bring a pot of water to the boil and add the frozen edamame. Cook as instructed in the packet or for three to five minutes. Drain and cool to room temperature.
  2. Meanwhile, sprinkle a pinch of salt over grated carrot and place it in a colander to drain. Once the edamame is cooled, squeeze out as much of the water from the carrot as you can.
  3. Reserve half cup of the whole edamame and put the rest in a food processor along with the carrot, two roughly chopped green onions, miso paste, lemon juice, mint, garlic, and ginger.
  4. Pulse until chunky. Taste and add salt if necessary. Add the reserved whole edamame and mix with a spoon.
  5. Make your wonton by placing one to two teaspoons in the centre of one wrapper. Dip your finger in water and run it along two edges. Fold into a half round and press down to seal, gently pressing the filling to squeeze out the air. Then bring the two opposite corners together and seal with a bit of water.
  6. Place the finished wontons on a pan as you go and cover them with a towel to prevent them from drying out.
  7. Bring the vegetable stock to a boil in a pot, add the sliced carrot and reduce the heat to a simmer.
  8. Drop in the wontons, cover the pot and simmer for two to three minutes.
  9. Divide the soup and wontons between four bowls and garnish with the thinly sliced green onion.
  10. Enjoy the soup.
