Ingredients

Ingredients for Pav Bhaji masala Powder

  • ¼ cup Cumin Seed (26 Grams)
  • 5 or 6 pieces Dry Chilli (Lal Mirch) (4 Grams)
  • 2 tablespoon Coriander seeds (11 Grams)
  • 1 tablespoon cloves (6 Grams)
  • 2 pieces Black Cardamoms (Badi Elaichi) (5 or 6 Grams)
  • 1 tablespoon mace (Javitri) (3 Grams)
  • 1 tablespoon Black Pepper (Sabut kali mirch) (10 Grrams)
  • 2 tablespoon fennel seeds (Saunf) (15 Grams)
  • 5 pieces cinnamon sticks (Dalchini) (about 2 inches or 4 Grams)
  • 2 tablespoon dry mango powder (Aamchur)
  • 3 pieces star anise (Chakriphool) (2 Grams)
  • 1 teaspoon Turmeric Powder (Haldi) (optional)
  • 1 tablespoon dry ginger powder (Saunth)
  • 1 piece nutmeg (Jaiphal) (5 Grams)
  • 2 teaspoon Black Salt or Rock Salt (optional)

Instructions

How to Make Pav Bhaji Masala at home

  • First take all the spices apart from powder ones and salt
  • Clean the whole spices, check for stones and molds on them and segregate if certain exists.

Drying the species in sun

  • Add all the whole spices in plate and keep them for 2 to 3 days in sun.
  • Cover them with light cotton cloth, to prevent settling of dust.

Pav bhaji Masala Powder

  • Firstly, takeout nutmeg in mortar-pestle and crush it separately
  • Add the remaining dried whole species in grinder jar.
  • Additionally, put the crushed nutmeg to the jar.
  • Now grind it till powder gets smooth.
  • Then add turmeric powder, ginger powder, dry mango and black salt.
  • Instead of black salt, regular salt could also be used. Turmeric powder is optional here.
  • Run the grinder once again, to get mix everthing well.
  • Check it once, if powder is not smooth then run the grinder untill it gets smooth.
  • Now allow the Pav Bhaji masala powder to get cool by spreading it on a tray or plate.
  • Take a clean jar, make sure it is dry. Now add the powder to it.
  • To store the jar, use cool dry place. You can also store it in fridge.

Notes for Pav Bhaji Masala :

  1. Use clean and dry jar to store masala for long time.
  2. Masala made by this recipe is of 100 grams, last longer when stored properly in air tight container.
  3. Jar can also be stored in fridge or freezer.
